A hearty and satisfying breakfast hash with crispy potatoes, savory bacon, and perfectly cooked eggs.

Ingredients

  • 4 medium potatoes, diced
  • 4 eggs
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Start by heating olive oil in a large skillet over medium heat.
  2. Once the oil is hot, add the diced potatoes. Cook until they are crispy and golden brown, approximately 15-20 minutes.
  3. Toss in the chopped bacon and cook until it’s crisp and fragrant.
  4. Add in the diced onion and bell pepper, sautéing until softened.
  5. Create four little wells in the hash. Carefully crack an egg into each well.
  6. Cover the skillet and cook until the eggs reach your desired doneness.
  7. Finally, season with salt and pepper. Serve warm and enjoy!
