A quick and indulgent breakfast pizza topped with scrambled eggs, sausage gravy, and cheese, perfect for busy mornings or weekend brunch.

  • 13.8-ounce tube refrigerated pizza crust
  • 2 tablespoons olive oil
  • 8 large eggs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup milk
  • 2 tablespoons salted butter
  • 15-ounce can Libbys Country Sausage Gravy
  • 2 cups shredded Colby jack cheese
  • ½ cup real bacon pieces

Instructions

  1. Preheat your oven to 425°F. Grease a large baking sheet (10″x 15″) with nonstick cooking spray.
  2. Roll out the refrigerated pizza crust onto the baking sheet, stretching it to cover the edges evenly. Brush olive oil over the top and poke it with a fork to prevent bubbling.
  3. Bake the crust for about 7 minutes until it starts to turn light brown.
  4. Whisk the eggs, salt, pepper, and milk together in a bowl until thoroughly combined.
  5. Melt the butter in a pan over low to medium heat. Pour in the egg mixture and gently scramble until fluffy.
  6. Remove the crust from the oven and spread the sausage gravy evenly over the top.
  7. Layer the scrambled eggs on top of the gravy, followed by a generous sprinkle of cheese and the bacon pieces.
  8. Return the pizza to the oven and bake for another 6-7 minutes, or until everything is warmed through and the cheese has melted.
  9. Slice into 12 portions and serve warm.
