A quick and delicious breakfast quesadilla featuring eggs, bacon, and cheddar cheese, perfect for busy mornings or leisurely brunches.

Ingredients

  • 2 large eggs
  • 4 slices of bacon
  • 1 cup shredded cheddar cheese
  • 4 tortillas
  • Salt and pepper to taste
  • Dipping sauces (optional)

Instructions

  1. Heat a skillet over medium heat. Cook the bacon until it’s crispy, then transfer it to a plate lined with paper towels to catch any excess grease.
  2. Scramble the eggs in the same skillet, seasoning them lightly with salt and pepper.
  3. Lay a tortilla flat in the skillet. On one half, sprinkle half of the cheese followed by the scrambled eggs and crumbled bacon. Top with the remaining cheese, then fold the tortilla in half.
  4. Cook each quesadilla for a couple of minutes on both sides until golden brown and the cheese has melted.
  5. Serve immediately with your choice of dipping sauces, such as salsa or sour cream.

Notes

For a healthier twist, consider swapping bacon for turkey bacon or adding some spinach for extra nutrition.
