Warm and cheesy breakfast quesadillas filled with scrambled eggs and ground turkey, perfect for a quick and satisfying breakfast.

  • 4 large flour tortillas
  • 1 pound ground turkey
  • 2 cups shredded Colby Jack cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Sliced green onions (for garnish)
  • Salsa (for serving)
  • Sour cream (for serving)

Instructions

  1. Heat a skillet over medium heat and add the ground turkey. Cook until it’s thoroughly browned and drain any excess grease.
  2. In a separate bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Pour the egg mixture into the skillet with the turkey and scramble until the eggs are just set.
  4. Heat another skillet over medium heat. On one half of each tortilla, spread the scrambled eggs, then add the ground turkey, and top generously with cheese.
  5. Fold the tortillas over to create half-moon shapes. Cook in the skillet for 2-3 minutes on each side until they’re golden brown and crispy.
  6. Once cooked, transfer to a cutting board and let cool slightly before slicing into wedges.
  7. Serve warm with salsa and sour cream on the side.
