Ingredients

  • 2 tsp yeast
  • 1 cup milk
  • 2 eggs
  • 200g feta cheese
  • 2 tbsp olive oil
  • 1 cup spinach
  • 1 cup quinoa
  • 1 can black beans
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Combine the flour, yeast, milk, and eggs in a large mixing bowl until a sticky dough forms.
  2. Cover and let the dough rise until it doubles in size.
  3. Shape the dough into rolls and place them on a baking sheet.
  4. Bake in a preheated oven until golden brown and fragrant.
  5. Place a block of feta cheese in a baking dish.
  6. Crack eggs over the cheese, drizzle with olive oil, and season.
  7. Bake until the eggs are set and the cheese is warm.
  8. Whisk eggs with spinach, bell peppers, and seasonings.
  9. Pour into muffin tins and bake until firm.
  10. Cook quinoa according to package instructions.
  11. Sauté onions, bell peppers, and garlic in olive oil until tender.
  12. Mix in cooked quinoa and black beans.
