  • 4 slices of bacon
  • 4 eggs
  • 1 cup diced potatoes
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and leave the drippings in the pan.
  2. Add the diced potatoes to the skillet. Sauté for about 10 minutes, stirring often, until golden brown and tender.
  3. Mix in the diced bell peppers and onions. Cook for an additional 5 minutes, until softened.
  4. Create four small wells in the potato mixture and crack one egg into each well.
  5. Cover the skillet with a lid and cook until the eggs reach your desired doneness.
  6. Sprinkle salt and pepper over the dish to enhance flavors.
  7. Crumble the reserved bacon and sprinkle it over the top for added crunch.
  8. Finish with chopped parsley and serve hot.
