Delightful breakfast taquitos filled with scrambled eggs, savory sausage, and melted cheese, perfect for any meal.

Ingredients

  • 7-ounce box fully cooked sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper to taste
  • 1 1/2 cups shredded cheese (your favorite kind)
  • 10 white corn tortillas (or use 6″ flour tortillas)

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Warm the sausages in a large skillet over medium-high heat until warmed through, then remove to a plate.
  3. Scramble the eggs in a bowl with a splash of water or milk, season with salt and pepper, and cook in the skillet until fully set.
  4. Prepare the tortillas by warming them in a hot, dry skillet until soft and pliable.
  5. Assemble the taquitos by placing scrambled eggs, a sausage link, and shredded cheese on each tortilla, then roll tightly.
  6. Bake the taquitos, lightly sprayed with cooking spray, for 10-15 minutes until golden brown and crispy. Serve with salsa.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for the best texture.
