Start your day with these delicious and nutritious breakfast toasts using plantains, sweet potato, avocado, and more.

Ingredients

  • Plantains
  • Peanut butter
  • Caramel
  • Bread
  • Sweet potato
  • Tofu
  • Avocado
  • Zucchini
  • Vegan stracciatella cheese
  • Mango
  • Matcha powder
  • Cream cheese
  • Aubergine
  • Vegan chili
  • Burrata cheese

Instructions

  1. Slice plantains and fry them until golden brown. Spread peanut butter on toasted bread, layer with caramelized plantains and yogurt.
  2. Cook diced sweet potatoes until tender. Crumble tofu into the mix, season, and serve on toasted bread, garnished with avocado.
  3. Grate zucchini and sauté until soft. Spoon onto toasted bread and top with vegan stracciatella cheese.
  4. Blend cream cheese with matcha powder and spread on toast. Top with mango slices.
  5. Roast aubergine until tender, combine with vegan chili, and pile on toast, finishing with burrata cheese.

Notes

Store leftovers in the refrigerator for up to 3 days. For best flavor, use ripe plantains and avoid overcooking zucchini.
