A quick and satisfying breakfast quesadilla filled with scrambled eggs and cheese.

Ingredients

  • 2 flour tortillas
  • 2 eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup cooked sausage or bacon (optional)
  • Salt and pepper to taste
  • Salsa or hot sauce (for serving)

Instructions

  1. Heat a skillet over medium heat.
  2. Scramble the eggs in the skillet until fully cooked, seasoning with salt and pepper.
  3. Place one tortilla in the skillet, then layer it with the scrambled eggs, cheese, and optional sausage or bacon.
  4. Top with the second tortilla and cook for about 2-3 minutes until golden brown.
  5. Carefully flip the quesadilla, cooking the other side until brown and the cheese has melted.
  6. Remove from the skillet, slice into quarters, and enjoy with salsa or hot sauce.

Notes

For extra flavor, brush the outsides of the tortillas with olive oil before cooking.
