Ingredients

  • 4 flour tortillas
  • 4 eggs
  • 1/4 cup milk
  • Salt to taste
  • Pepper to taste
  • 1 cup diced bell peppers
  • 1 cup spinach
  • 1/2 cup cheese (optional)
  • 1/2 cup cooked meats (optional)

Instructions

  1. In a bowl, whisk the eggs, milk, salt, and pepper together until smooth.
  2. Heat a non-stick skillet over medium heat and scramble the egg mixture until fully cooked.
  3. Lay out the tortillas flat on a clean surface and fill each with scrambled eggs, diced bell peppers, spinach, cheese, or cooked meats.
  4. Roll each tortilla tightly, tucking in the sides for a neat finish.
  5. Serve immediately or wrap in foil to store in the refrigerator for meal prep.
