A spicy, creamy dip featuring shredded rotisserie chicken, perfect for game-day potlucks and gatherings.

  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (adjust to taste)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • Optional: Chopped green onions or crumbled blue cheese for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, combine the shredded chicken and softened cream cheese. Mix until the cream cheese is mostly incorporated.
  3. Add the buffalo sauce, ranch dressing, half of the shredded cheddar cheese, and mozzarella cheese. Mix until smooth and evenly combined.
  4. Spread the mixture into the prepared baking dish and smooth the top.
  5. Sprinkle the remaining shredded cheddar cheese over the dip.
  6. Bake for 20-25 minutes, until the dip is hot and bubbly and the top is lightly browned.
  7. Let cool for 5 minutes. Garnish with green onions or blue cheese if desired. Serve warm with tortilla chips, crackers, celery sticks, or carrot sticks.

Notes

For a creamier texture, beat the cream cheese with a hand mixer before adding other ingredients. Double the recipe for larger gatherings.
