A fast and comforting Cajun shrimp recipe with a creamy tomato sauce and a bright bell pepper crunch, ready in about 20 minutes.

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Cooked pasta or rice for serving

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper. Sauté until softened, about 4–5 minutes.
  3. Stir in 2 cloves minced garlic and cook another minute until fragrant.
  4. Add 1 pound shrimp and 1 tablespoon Cajun seasoning to the pan. Cook, stirring occasionally, until the shrimp turn pink and opaque, about 2–3 minutes.
  5. Pour in 1 can diced tomatoes and 1 cup heavy cream. Stir to combine.
  6. Let the sauce simmer gently for 5–10 minutes, until it thickens slightly.
  7. Taste and season with salt and pepper. Serve the shrimp and sauce over cooked pasta or rice.

Notes

For a lighter version, swap heavy cream for half-and-half or coconut milk. Use medium or large shrimp; if using frozen, thaw and pat dry. Adjust Cajun seasoning for spice preference.
