Delicious muffins filled with crispy bacon and gooey cheddar, perfect for breakfast, brunch, or snacks.

  • 1 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked until crispy and crumbled
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 0.3 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Cook the bacon in a skillet until it’s nice and crispy. Once done, crumble it into small pieces.
  3. Whisk together the flour, baking powder, and salt in a large bowl.
  4. Beat the eggs in another bowl. Add the milk and vegetable oil, whisking until smooth.
  5. Pour the wet mixture into the dry ingredients, folding until just combined.
  6. Fold in the shredded cheddar and crumbled bacon gently.
  7. Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
  10. Serve warm or at room temperature.

Notes

For an extra cheesy experience, add more shredded cheddar. Ensure bacon is crispy for the best texture.
