Deliciously cheesy and savory pancakes with fresh chives, perfect for any meal.

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/4 cup chopped fresh chives
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt until combined.
  2. In a separate bowl, mix the milk, egg, and melted butter until well blended.
  3. Pour the wet mixture into the dry ingredients. Gently stir to combine—it’s okay if there are a few lumps!
  4. Fold in the shredded cheese and chopped chives until evenly distributed through the batter.
  5. Heat a non-stick skillet over medium heat, adding a small amount of butter or oil.
  6. For each pancake, pour about 1/4 cup of batter onto the skillet.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  8. Repeat until all batter is used, adjusting the heat as necessary to avoid burning.
  9. Serve warm, garnished with extra chives or your favorite toppings.

Notes

For best results, don’t overmix the batter. Experiment with different cheese types for varied flavors.
