A quick and hearty meal featuring tender chicken breasts baked with colorful bell peppers and topped with melted cheese.

  • 4 boneless skinless chicken breasts
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Drizzle olive oil over the chicken breasts.
  3. Sprinkle Italian seasoning, garlic powder, paprika, salt, and black pepper over the chicken. Rub the spices into both sides.
  4. In a bowl, toss the sliced bell peppers and onion (if using) in the remaining olive oil.
  5. Arrange the seasoned chicken breasts and veggies in the baking dish, with the peppers surrounding and on top of the chicken.
  6. Bake uncovered for 20 to 25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven, sprinkle shredded mozzarella and Parmesan over the top.
  8. Return to the oven and bake for an additional 3 to 5 minutes until the cheese is melted and bubbly.
  9. Garnish with fresh parsley and serve hot.

Ensure chicken breasts are of even thickness for uniform cooking. Consider marinating the chicken in olive oil and spices for extra flavor.
