A quick and indulgent breakfast of crispy toast topped with a cheesy egg mixture that’s perfect for busy mornings.

  • 1 large egg
  • ½ cup (2 oz) grated cheese (cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt and black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Begin by lightly toasting the bread or broiling it for 1 to 2 minutes on each side to achieve a nice crisp.
  2. Preheat your oven to 400°F (or set your toaster oven to ‘BAKE’).
  3. Crack the egg into a small bowl and beat it until well combined.
  4. Stir in the grated cheese and chopped herbs, seasoning with salt and black pepper.
  5. Spread the egg and cheese mixture evenly over the toasted bread slices. If you like a kick, sprinkle a pinch of cayenne on top.
  6. Bake in the oven for about 10 to 12 minutes until the mixture is puffed and lightly browned, or air fry at 340°F for 8 to 10 minutes for a quicker option.

Notes

For added flavor, drizzle with sriracha or hot sauce before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days.
