  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your preference)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or muffin tin liners

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare the muffin tin by either spraying it with cooking spray or lining it with muffin liners.
  2. In a mixing bowl, whisk together the 6 large eggs until well beaten.
  3. Stir in the cottage cheese, shredded cheese, and diced vegetables. Season with salt and pepper and mix until everything is well combined.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and just beginning to turn golden on top.
  6. Allow them to cool slightly before removing from the tin. Serve warm or store in the fridge for easy meal prep.
