Delicious and protein-packed egg bites made with cottage cheese, perfect for breakfast or meal prep.

  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced vegetables (bell peppers, spinach, onions, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a muffin tin with cooking spray or oil.
  2. Whisk together the cottage cheese and eggs in a mixing bowl until well combined.
  3. Stir in the shredded cheese, diced vegetables, salt, and pepper. Mix thoroughly to ensure everything is evenly distributed.
  4. Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake in the preheated oven for 20–25 minutes or until the bites are set and lightly golden on top.
