A quick and hearty breakfast dish featuring sautéed potatoes, fluffy scrambled eggs, and melted cheddar cheese.

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup diced ham or bacon
  • Salt and pepper to taste
  • Cooking oil or butter

Instructions

  1. Heat a generous amount of oil or butter in a large skillet over medium heat.
  2. Add in the diced potatoes and season with salt and pepper. Sauté until golden and tender, about 10-15 minutes.
  3. In a separate bowl, whisk the eggs with a pinch of salt and pepper until combined.
  4. Once the potatoes are cooked, push them to one side of the skillet. Pour the eggs into the empty space and scramble until fluffy.
  5. Stir in the cheddar cheese and optional ham or bacon. Cook until heated through and cheese has melted.
  6. Serve hot and enjoy!

Notes

For a healthier version, substitute potatoes with sweet potatoes or use egg whites. Can be dressed up with toppings like sour cream or fresh parsley.
