A hearty Cheesy Potato Egg Scramble combines crispy potatoes, fluffy eggs, and melty cheddar cheese into a satisfying meal perfect for any time of day.

  • 2 large potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup diced ham or bacon
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes, spreading them evenly. Cook for about 10-15 minutes, stirring occasionally, until golden brown and crispy.
  3. While the potatoes cook, crack the eggs into a bowl. Whisk them well and add salt and pepper.
  4. Once the potatoes are crispy, push them to one side of the skillet. Pour the whisked eggs into the empty space and scramble until just set.
  5. If using diced ham or bacon, add it to the skillet now and mix everything together.
  6. Sprinkle the shredded cheddar cheese over the mixture. Allow it to melt as you stir everything until well combined.
  7. Serve hot, garnished with chopped green onions for a fresh pop of flavor.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in a skillet over low heat to maintain texture.
