Hearty breakfast burritos baked on a sheet pan, perfect for family meals or meal prep.

Ingredients

  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese (optional)
  • 1 cup cooked breakfast sausage or bacon (chopped)
  • 1 cup diced bell peppers
  • ½ cup chopped onions
  • 1 cup frozen hash browns (thawed)
  • Salt and black pepper to taste
  • 68 large flour tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the eggs and milk together in a large mixing bowl until fully blended. Season with salt and black pepper.
  3. Fold in the chopped sausage or bacon, diced bell peppers, onions, and thawed hash browns until well combined.
  4. Pour the mixture onto a greased sheet pan, spreading it out evenly. Bake for 20-25 minutes, or until the eggs are set and the top is golden.
  5. Remove from the oven and sprinkle with cheddar. If using mozzarella, add it now. Return to the oven for an additional 5 minutes until the cheese is melted.
  6. Once slightly cooled, cut the mixture into sections, place each section onto a tortilla, and wrap burrito-style.
  7. Enjoy!

Notes

For fluffier eggs, beat well before adding milk. Use non-stick spray on the sheet pan to prevent sticking.
