  • 1 can (14.5 oz) diced tomatoes
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 lb seasoned chicken, diced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • Cheese (optional)

Instructions

  1. Cook the penne pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add diced onions and bell peppers to the skillet and sauté for 3-4 minutes until tender.

  6. Gently combine the cooked pasta with the chicken and vegetable mixture, stirring until evenly coated.
