A delicious, satisfying chicken pasta dish with bold flavors and a creamy texture, perfect for busy weeknights.

  • 8 oz fettuccine pasta
  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 packet fajita seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente. Drain and set aside.
  2. Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Add sliced chicken and cook until golden brown and cooked through, about 4-6 minutes. Transfer to a plate.
  3. Add more oil if needed to the skillet. Sauté the red and green bell peppers and onion until tender but still crisp, about 5 minutes. Add minced garlic and cook until fragrant.
  4. Return chicken to the skillet. Sprinkle in fajita seasoning, then pour in chicken broth and heavy cream. Let simmer for 3-5 minutes until the sauce thickens.
  5. Add cooked fettuccine to the skillet and toss until well coated with the sauce.
  6. Taste and adjust seasoning with salt and pepper. If too thick, add reserved pasta water or more broth as needed.
  7. Garnish with freshly chopped cilantro and serve hot.

Notes

For a low-carb option, substitute fettuccine with spiralized zucchini. Adjust the spice with pepper flakes or jalapeños for extra heat.
