A comforting dish combining tender chicken, creamy sauce, and gluten-free farfalle pasta, perfect for quick weeknight dinners.

  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese

Instructions

  1. Boil water: Fill a large pot with water and bring it to a boil. Optionally, add a pinch of salt.
  2. Cook pasta: Once boiling, add gluten-free farfalle pasta. Cook according to package directions until al dente.
  3. Prepare the spice rub: In a small bowl, mix together paprika, oregano, garlic powder, and seasoning.
  4. Sear the chicken: Pound chicken breasts to even thickness. Season both sides with the spice mix. Heat olive oil in a skillet over medium heat. Sear chicken for about 5 minutes per side until golden brown.
  5. Cook through: Lower the heat, cover the skillet, and allow to cook for an additional 10-12 minutes until the chicken reaches an internal temperature of 165°F. Remove the chicken from the skillet and set it aside.
  6. Make the sauce: Using the same skillet, melt butter. Add shallots, garlic powder, and Italian seasoning. Simmer for one minute. Stir in gluten-free flour for thickness.
  7. Add cream and cheese: Gradually whisk in chicken broth and heavy cream. Once smooth, slowly mix in shredded Parmesan until melted.
  8. Combine: Toss the cooked pasta in the creamy sauce until well-coated.
  9. Serve: Slice the seared chicken and place it atop the pasta. Enjoy warm!

Notes

For a spicy kick, consider adding red pepper flakes to the sauce. Swap chicken thighs or use a dairy-free alternative for the cream as needed.
