Chicken Madeira

A classic Chicken Madeira dish featuring tender chicken, rich Madeira wine, and gooey mozzarella, perfect for special occasions or weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for 5–7 minutes on each side until golden brown and cooked through. Set the chicken aside.
  4. In the same skillet, add the sliced mushrooms and sauté for about 4–5 minutes until they soften.
  5. Pour in the Madeira wine and chicken broth, using a spatula to scrape up any browned bits from the bottom of the pan.
  6. Bring the mixture to a simmer and let it reduce for about 3–5 minutes.
  7. Stir in the butter until it melts and combines into the sauce.
  8. Return the chicken to the skillet, spoon the sauce over each breast, and sprinkle with mozzarella cheese.
  9. Cover the skillet and let it cook until the cheese is melted and bubbly.
  10. Garnish with fresh parsley and serve!

Notes

For a lighter version, use turkey or chicken thighs. Vegan options can include seitan or mushrooms with vegetable broth.
