A delightful blend of tender chicken breasts, sweet apples, and warm apple cider, perfect for weeknight dinners or gatherings.

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 apples, cored and sliced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Place them in the skillet and cook until golden brown, about 5 to 7 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, sauté the sliced onions and apples for about 5 minutes until they soften and caramelize.
  4. Deglaze the pan by pouring in the apple cider and chicken broth, scraping any brown bits from the bottom.
  5. Return the chicken to the skillet, cover, and simmer for 15 to 20 minutes, or until the chicken is fully cooked through.
  6. Serve hot, garnished with fresh thyme, and consider pairing with rice or crusty bread.

Notes

For a richer flavor, add a splash of cream to the sauce before serving. Adjust seasoning based on the sweetness of the apples used.
