A delightful combination of crispy breaded chicken smothered in marinara sauce and gooey melted cheese, perfect for weeknight dinners or special gatherings.

  • 1/4 cup vegetable oil
  • 1/2 cup flour
  • 1 1/2 teaspoons seasoned salt
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups panko breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 1 1/2 cups mozzarella cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F.
  2. Set up three shallow pans for the flour, eggs, and breadcrumbs.
  3. Whisk the eggs until frothy to create a delightful coating.
  4. Halve the chicken breasts lengthwise, cover them with plastic wrap, and pound to about ½ inch thickness.
  5. Pat the chicken dry and season generously with salt and pepper.
  6. First, coat each piece in flour, shaking off any excess.
  7. Dip the floured chicken into the egg mixture, allowing the extra to drip off.
  8. Roll each piece in panko breadcrumbs, ensuring thorough coverage for that crispy exterior.
  9. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  10. Add the chicken to the hot oil and cook for 3-4 minutes on each side until golden brown.
  11. Transfer the crispy chicken to a wire rack to maintain their crunch.
  12. On a light-colored baking sheet, arrange the chicken, top with marinara sauce, and sprinkle with mozzarella cheese.
  13. Bake uncovered for 12 minutes. For a bubbly finish, broil for 1-2 minutes, watching closely to avoid burning.
  14. Before serving, sprinkle fresh parsley over the top for a burst of color and flavor.
