A delicious fusion of breaded chicken, tangy pasta sauce, and gooey cheese, perfect for family dinners and gatherings.

  • 16 ounces pasta (spaghetti, fettuccini, or a pasta of your choice)
  • 1 pound chicken breast (cut lengthwise in half)
  • Salt and pepper (to season)
  • 2 large eggs (lightly beaten)
  • 1 cup Parmesan cheese (grated, divided)
  • 1 cup Panko breadcrumbs
  • ¼ cup olive oil (extra virgin)
  • 24 ounces pasta sauce
  • 8 ounces Mozzarella cheese (cut into slices)

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the pasta according to package instructions until it’s al dente. Drain and set aside.
  2. Season both sides of the chicken breast halves with salt and pepper. Dip each piece into the beaten eggs, ensuring they’re fully coated.
  3. Coat the chicken with a mix of Panko breadcrumbs and half of the grated Parmesan cheese. Press firmly to ensure a good coating.
  4. Heat olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken. Cook for about 3-4 minutes on each side, until it turns golden brown and is fully cooked. Remove from heat.
  5. In a baking dish, spread a layer of pasta sauce on the bottom. Add the cooked pasta, then carefully place the fried chicken on top. Pour the remaining pasta sauce over the chicken, then add slices of mozzarella cheese and sprinkle the rest of the grated Parmesan cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Notes

For best results, ensure the oil is hot before frying the chicken. Leftovers can be stored in an airtight container for 3-4 days.
