A classic Italian dish combining breaded chicken, marinara sauce, and melted cheese, perfect for any occasion.

  • 2 eggs
  • 3 cloves garlic, grated
  • 2 tablespoons chopped parsley
  • 6 chicken cutlets
  • 1 cup panko
  • 1/2 cup bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 cup avocado oil
  • 1 jar (24 ounces) marinara sauce
  • 1/2 cup shredded mozzarella

Instructions

  1. Preheat your oven to 400°F (204°C) and grease a baking dish.
  2. Whisk together the eggs, parsley, grated garlic, salt, and pepper until smooth.
  3. Dip each chicken cutlet into the egg mixture, coating fully. Let marinate for 15-45 minutes.
  4. Combine the panko, breadcrumbs, Parmesan cheese, basil, oregano, garlic powder, and salt in another bowl.
  5. Coat each marinated chicken cutlet in the breadcrumb mixture, pressing lightly.
  6. Heat avocado oil in a skillet over medium heat and fry the chicken for about 5 minutes on each side, until golden brown.
  7. Transfer the chicken to a baking sheet. Top with marinara sauce and shredded mozzarella.
  8. Bake in the preheated oven for 17-20 minutes, until cooked through and the cheese is bubbly.

Notes

For a healthier option, swap avocado oil for olive oil and use gluten-free breadcrumbs if desired.
