A classic Italian dish featuring crispy chicken, gooey melted cheese, and rich marinara sauce, perfect for family dinners or special occasions.

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil, chopped (optional, for garnish)
  • Cooked spaghetti or pasta of your choice (optional, for serving)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the chicken breasts between sheets of plastic wrap or baking paper and pound them to about 1/2 inch thickness.
  3. Season both sides of each chicken breast with salt and pepper.
  4. Prepare three shallow dishes: one for flour, one for the beaten eggs, and one for breadcrumbs mixed with Parmesan.
  5. Dredge each chicken breast in flour, then egg, and finally coat in the breadcrumb mixture.
  6. Heat olive oil in a large skillet over medium heat and cook the chicken for 3-4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish and spoon marinara sauce over each breast. Sprinkle with mozzarella.
  8. Bake for 10-15 minutes until the cheese is melted and chicken is fully cooked.
  9. Let rest for 5 minutes before serving. Garnish with fresh basil and serve with spaghetti or pasta.

Notes

For extra crunch, consider double-dipping the chicken in the egg and breadcrumb mixture. Fresh herbs like basil add great flavor.
