A comforting classic Italian-American dish featuring succulent chicken breasts, crispy breadcrumbs, and gooey melted cheese topped with marinara sauce.

  • 34 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup fresh mozzarella cheese, sliced
  • 2 cups marinara sauce
  • ½ cup grated Parmesan cheese
  • Olive oil for frying
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with three bowls: one with seasoned flour, one with beaten eggs, and one for breadcrumbs mixed with garlic powder.
  3. Dip each chicken breast first into the flour, allowing any excess to shake off, then into the eggs, and finally coat thoroughly with breadcrumbs.
  4. Heat olive oil in a skillet over medium heat. Sear the chicken for about 4-5 minutes on each side until golden brown.
  5. Place the seared chicken in a greased baking dish. Spoon marinara sauce over each piece and top generously with mozzarella and Parmesan cheese.
  6. Bake for about 20 minutes, or until the cheese is bubbly and golden brown.

Notes

For extra crunch, consider adding grated Parmesan to the breadcrumb mixture. Feel free to swap mozzarella for provolone or use whole wheat breadcrumbs for a healthier spin.
