A classic Italian dish featuring crispy chicken, savory marinara, and melted mozzarella, perfect for weeknight dinners or impressing guests.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil or parsley for garnish (optional)
  • Cooked spaghetti for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pound the chicken breasts until they are an even thickness. Season both sides with salt and pepper.
  3. Set up your dredging station: place flour on one plate, whisk the eggs and water in a bowl, and mix the breadcrumbs with Parmesan on another plate.
  4. Dredge each chicken breast in the flour, dip it in the egg mixture, and then coat it with the breadcrumb and Parmesan mixture.
  5. Heat olive oil in a skillet over medium-high heat. Add the chicken and brown for about 3-4 minutes on each side until golden.
  6. Transfer the browned chicken to a baking dish. Top with marinara sauce and shredded mozzarella.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Garnish with fresh basil or parsley and serve over spaghetti for a complete meal.

Notes

For a crispier crust, consider double coating the chicken. Freshly grated cheese melts better than pre-grated.
