A classic Italian-American dish with crispy breaded chicken, marinara sauce, and melted mozzarella cheese.

  • 4 boneless, skinless chicken breasts (about 600 g total)
  • 100 g breadcrumbs (Italian-style or plain)
  • 50 g grated Parmesan cheese
  • 2 eggs, beaten
  • 60 g all-purpose flour
  • 250 ml marinara sauce
  • 200 g mozzarella cheese, shredded or sliced
  • 40 ml olive oil
  • Salt & pepper, to taste
  • 2 g garlic powder
  • 5 g fresh basil or parsley, chopped (for garnish)

Instructions

  1. Pound the chicken: Begin by pounding each chicken breast to an even thickness of about 1.5 cm. Season both sides generously with salt, pepper, and garlic powder.
  2. Dredge the chicken: Prepare a dredging station with three bowls: one with flour, one with beaten eggs, and the last with a mixture of breadcrumbs and Parmesan. First, coat the chicken in flour, then dip it in the beaten eggs, and finally, cover it with the breadcrumb and Parmesan mixture.
  3. Fry the chicken: Heat olive oil in a skillet over medium heat. Fry each chicken breast for about 3-4 minutes per side until they are golden brown and cooked through.
  4. Assemble in a baking dish: Transfer the golden chicken to a baking dish. Spoon marinara sauce generously over each piece and sprinkle the mozzarella cheese on top.
  5. Bake to perfection: Preheat your oven to 200°C (about 400°F). Bake for approximately 15 minutes, or until the cheese is bubbly and golden on top.
  6. Garnish and serve: Just before serving, finish with freshly chopped basil or parsley. Pair with spaghetti or a crisp salad for a complete meal.

Notes

Consider using pre-made marinara sauce or frozen chicken breasts for quicker preparation. To keep leftovers fresh, store in an airtight container in the fridge for up to three days or freeze for up to three months.
