A classic Italian-American dish featuring crispy chicken fillets topped with marinara sauce and gooey cheese, perfect for any family meal.

  • 2 boneless, skinless chicken breasts, cut in half horizontally
  • ½ cup all-purpose flour
  • 1 cup Italian-seasoned breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • ½ tsp garlic salt
  • 1 tsp garlic powder
  • ½ tsp seasoned salt
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cups marinara or red pasta sauce
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded parmesan cheese
  • 2 large eggs, beaten
  • 2 tablespoons milk

Instructions

  1. Slice each chicken breast in half horizontally, resulting in four thin fillets. Season with salt and pepper.
  2. Dredge each chicken piece in flour, coating evenly.
  3. Mix the eggs and milk in a bowl, then dip the floured chicken into this mixture. Coat with breadcrumbs. For added crunch, repeat the egg and breadcrumb steps.
  4. Heat olive oil and butter in a skillet over medium heat. Fry the chicken for about 3-4 minutes on each side until golden brown.
  5. Spread marinara sauce over a baking sheet. Place the fried chicken fillets on top and sprinkle generously with mozzarella and Parmesan cheese.
  6. Broil for 2-3 minutes or until the cheese is melted and bubbling to perfection.
  7. Plate and serve immediately, savoring the delicious layers of flavor.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For reheating, use the oven at 350°F (175°C) for 10-15 minutes.
