A timeless Italian-American classic featuring crispy chicken coated in marinara sauce and oozing mozzarella, perfect for dinner or meal prep.

  • 4 boneless (skinless chicken breasts)
  • Salt and black pepper (to taste)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs
  • 2 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp olive oil (for frying)
  • Fresh basil leaves (for garnish, optional)

Instructions

  1. Start by pounding the chicken breasts to an even thickness for consistent cooking. Season them generously with salt and black pepper.
  2. Create a dredging station: place flour in one bowl, beaten eggs in another, and in a third bowl mix together breadcrumbs, grated parmesan cheese, garlic powder, and Italian herbs.
  3. Coat each chicken breast in flour first, then dip it into the egg, and finally press it into the breadcrumb mixture to fully coat.
  4. Heat olive oil in a skillet over medium-high heat. Fry the chicken for about 5-7 minutes per side, until golden brown and cooked through.
  5. Once fried, top each chicken breast with marinara sauce and sprinkle with shredded mozzarella cheese. Place in the oven until the cheese is melted and bubbly. Garnish with fresh basil before serving, and enjoy!

Notes

For an extra crispy coating, allow the breaded chicken to rest for a few minutes before frying. You can also bake the chicken instead of frying for a lighter version.
