A comforting Chicken Parmesan recipe featuring crispy chicken cutlets, rich tomato sauce, and gooey cheese, perfect for busy weeknights.

  • 4 chicken cutlets
  • Salt
  • Pepper
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 1/2 cup olive oil
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups San Marzano tomatoes, crushed
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken cutlets generously with salt and pepper.
  3. Dredge each cutlet in flour, making sure to coat it well, and shake off any excess flour.
  4. Dip each chicken cutlet into beaten eggs, letting any excess drip off.
  5. Coat the cutlets with bread crumbs, pressing lightly to ensure they stick.
  6. Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides.
  7. Combine the crushed San Marzano tomatoes, minced garlic, and chopped basil in a saucepan. Let it simmer for about 15 minutes.
  8. Arrange the fried chicken in a baking dish, cover them with the tomato sauce, and sprinkle mozzarella and Parmesan cheeses on top.
  9. Bake for 20-25 minutes until the cheese is melted and bubbly.
  10. Serve hot, ideally paired with pasta or a crisp salad.

Notes

For a healthier option, try using almond flour instead of traditional flour or experiment with different cheeses for a unique flavor.
