A comforting Italian-American classic featuring crispy fried chicken layered with marinara sauce and melted cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Beat the eggs in a medium bowl. In another bowl, combine the breadcrumbs and Parmesan cheese.
  4. Dip each chicken breast into the beaten eggs, then roll them in the breadcrumb mixture until fully coated.
  5. Heat olive oil in a skillet over medium heat. Fry the chicken for 4-5 minutes on each side, until golden brown and crispy.
  6. Place the fried chicken in a baking dish. Pour marinara sauce over each piece and sprinkle mozzarella cheese on top.
  7. Bake in the oven for about 20 minutes, until the cheese is bubbly and the chicken is cooked through.
  8. Garnish with fresh basil before serving.

Notes

For extra crunch, consider using Panko breadcrumbs. Ensure chicken reaches 165°F (75°C) for safety.
