  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 3 tablespoons tahini
  • Juice of 1 lemon
  • Pita bread or flatbreads for serving
  • Vegetables for garnish (e.g., lettuce, tomatoes, cucumbers)

Instructions

  1. In a bowl, mix the olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper until well combined.
  2. Add the chicken thighs to the bowl and ensure they’re well coated in the marinade. Cover and marinate for at least 1 hour; overnight is best for deeper flavor.
  3. Preheat your grill or skillet over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until cooked through and slightly charred.
  4. While the chicken is grilling, prepare the garlic sauce by combining yogurt, tahini, lemon juice, and extra minced garlic. Mix until smooth and creamy.
  5. Once cooked, allow the chicken to rest before slicing it thinly against the grain.
  6. To serve, place the chicken on warm pita or flatbreads, drizzle generously with the garlic sauce, and top with fresh veggies.
