A hearty and comforting dish that combines tender chicken, vibrant vegetables, and creamy mashed potatoes.

  • 1 lb chicken breast, cooked and shredded
  • 2 cups mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups mashed potatoes
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until soft and translucent, about 4–5 minutes.
  3. Stir in the mixed vegetables and sauté for another 4–5 minutes, just until heated through.
  4. Add the shredded chicken, chicken broth, thyme, rosemary, and season with salt and pepper to taste. Bring to a gentle simmer and allow to cook for about 10 minutes to meld the flavors.
  5. Pour the mixture into a greased baking dish, spreading it evenly across the bottom.
  6. Spoon the mashed potatoes over the top, smoothing it out. For added color, you can brush it lightly with milk.
  7. Bake for 25–30 minutes, or until warmed through and the top is golden brown.
  8. For a crispier top, broil for the last 2–3 minutes.
  9. Allow it to cool for a few minutes before serving.

Notes

Consider garnishing with fresh herbs. Pairs well with a light salad and white wine.
