A comforting and hearty casserole combining tender chicken, cheese, and spaghetti, perfect for weeknight dinners and family gatherings.

  • 8 oz spaghetti
  • 2 cups cooked chicken, shredded
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes with green chiles
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions until al dente. Drain well.
  3. In a large mixing bowl, combine the drained spaghetti with shredded chicken, cream of mushroom soup, diced tomatoes, onion, bell pepper, garlic powder, salt, and pepper. Mix until everything is evenly combined.
  4. Stir in two-thirds of the shredded cheese—reserve the remaining cheese for the topping.
  5. Transfer the mixture into the greased baking dish and spread it out evenly.
  6. Sprinkle the reserved cheese on top.
  7. Bake for 25-30 minutes, or until the casserole is hot and the cheese is melted and bubbly.
  8. Allow the dish to rest for 5 minutes before serving. Enjoy warm!

Notes

This casserole can be made ahead of time and stored in the fridge before baking. It reheats beautifully.
