A quick and delicious Chicken Stir-Fry featuring vibrant mixed vegetables and tender chicken, perfect for busy weeknights.

  • 1 pound of chicken breast, diced
  • 2 cups of mixed vegetables (carrots, bell peppers, and broccoli)
  • 1 cup of rice (white or brown)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat.
  2. Once the oil is hot, add the diced chicken breast and season it with salt and pepper. Cook for about 5-7 minutes until the chicken is golden and fully cooked.
  3. Stir in the mixed vegetables and sauté them for another 4-5 minutes until they are tender.
  4. Add the cooked rice to the skillet, tossing gently to combine everything.
  5. Pour the soy sauce over the mixture and stir well. Let it cook for an additional 2-3 minutes to heat everything through.
  6. Remove the skillet from heat, garnish with fresh herbs, and serve warm.
