A flavorful and nutritious dish combining creamy chickpeas and sunny-side-up eggs, perfect for breakfast, brunch, or dinner.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 eggs
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add the drained chickpeas. Warm them through for a couple of minutes.
  2. Add the chopped sun-dried tomatoes to the skillet, stirring well to mix all the flavors together.
  3. Use a spoon to create two little wells in the chickpea mixture.
  4. Crack an egg into each well.
  5. Cover the skillet with a lid and let the eggs cook until they reach your desired doneness.
  6. Sprinkle with salt and pepper to taste.
