A quick and delicious Chinese Chicken Stir-Fry packed with protein and colorful vegetables, perfect for busy weeknights.

  • 1 lb chicken breast, diced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, combine the diced chicken, soy sauce, sesame oil, minced garlic, and grated ginger. Let it marinate for about 15 minutes for maximum flavor.
  2. Heat a pan over medium heat. Add the marinated chicken and cook until it’s browned and fully cooked through, which should take around 7-10 minutes.
  3. After the chicken is cooked, add the sliced bell pepper, onion, and broccoli florets to the pan. Stir-fry these ingredients for about 5-7 minutes until they are tender but still have a nice crunch.
  4. In a small bowl, mix the cornstarch with water to create a slurry. Pour this mixture into the pan while stirring continuously until the sauce thickens to your liking.
  5. Season with salt and pepper, adjusting the taste to your preference.
  6. Serve the vibrant stir-fry hot over a bed of cooked rice.

Notes

For extra flavor, add a splash of rice vinegar or a sprinkle of five-spice powder during cooking. Customize vegetables based on seasonal availability.
