A flavorful and easy-to-prepare dish featuring zesty lime and fresh cilantro that’s perfect for weeknight dinners or gatherings.

  • 4 boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh lime juice (about 23 limes)
  • 2 tablespoons lime zest
  • 1/4 cup chopped fresh cilantro
  • 4 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Fresh lime wedges (for serving)
  • Extra chopped cilantro (for garnish)
  • Avocado slices (optional)
  • Rice or quinoa (for serving)

Instructions

  1. In a medium bowl, whisk together the lime juice, lime zest, chopped cilantro, minced garlic, honey, ground cumin, smoked paprika, and chili powder to create the marinade.
  2. Place the chicken in a resealable plastic bag or shallow dish, pouring the marinade over it to coat well. Refrigerate for at least 30 minutes—up to 2 hours for a richer flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade, discarding any leftover marinade.
  4. Grill the chicken for 6-7 minutes per side until the internal temperature reaches 165°F (75°C). Alternatively, if baking, preheat your oven to 400°F (200°C) and place the marinated chicken in a baking dish. Bake for 20-25 minutes or until cooked through.
  5. Once done, let the chicken rest for a few minutes before slicing. Serve garnished with lime wedges, extra cilantro, and avocado slices, alongside rice or quinoa.

Notes

Marinate the chicken longer for enhanced flavor and allow it to rest after cooking for better moisture retention.
