Cinnamon Roll Baked Oatmeal Squares

Bringing the comfort of freshly baked cinnamon rolls to your breakfast table in a wholesome oatmeal form, these squares are delicious and nutritious.

Ingredients

  • 1 ½ cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • For the swirl:
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the rolled oats, baking powder, ½ teaspoon of cinnamon, and salt until combined.
  3. In a separate bowl, beat the egg and then stir in the milk, maple syrup (or honey), melted butter, and vanilla extract until fully mixed.
  4. Gently combine the wet and dry ingredients, being careful not to overmix.
  5. Pour half of the oatmeal mixture into the greased baking dish.
  6. For the cinnamon swirl, mix melted butter, brown sugar, and ½ teaspoon of cinnamon in a small bowl. Sprinkle half of this mixture over the first oatmeal layer.
  7. Layer on the remaining oatmeal mixture, topping it with the rest of the cinnamon-sugar blend.
  8. Bake for 25-30 minutes, or until the squares are set and lightly golden brown.
  9. Allow to cool slightly before cutting into squares.

Notes

These squares are delightful on their own or with a drizzle of maple syrup or honey. Pair with fresh fruit or yogurt for added flavor.
