A delightful twist on traditional oatmeal that combines the ease of baked oats with the irresistible flavors of cinnamon rolls. Perfect for breakfast or a snack.

Ingredients

  • 1 ½ cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or coconut oil (for swirl)
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon (for swirl)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Whisk together rolled oats, baking powder, ½ teaspoon of cinnamon, and salt in a large bowl.
  3. Beat the egg with the milk, maple syrup, melted butter, and vanilla extract in another bowl until well combined.
  4. Pour the wet mixture into the dry oat mixture and stir gently until just combined.
  5. Layer half of the oatmeal mixture into the greased baking dish evenly.
  6. Mix the remaining tablespoon of melted butter, brown sugar, and ½ teaspoon cinnamon to create the swirl mixture in a small bowl.
  7. Sprinkle half of the cinnamon-sugar mixture over the first layer of oatmeal in the baking dish.
  8. Pour the remaining oatmeal mixture over the top, followed by the rest of the cinnamon-sugar mixture.
  9. Bake in the oven for 25-30 minutes, or until the oats are set and the top is lightly golden brown.
  10. Let cool slightly before cutting into squares and serving.

Notes

To keep the squares light and fluffy, mix just until combined. These can be assembled the night before and baked in the morning for a hassle-free breakfast.
