A delightful and wholesome baked oatmeal that combines the flavors of cinnamon rolls, perfect for breakfast or brunch.

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups milk (dairy or non-dairy)
  • 1/3 cup maple syrup
  • 1/4 cup applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the milk, maple syrup, applesauce, and vanilla extract until completely smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined—don’t overmix!
  5. Transfer everything into a greased baking dish, spreading it out evenly.
  6. In a small bowl, mix the brown sugar with optional chopped nuts. Sprinkle this mixture generously over the top.
  7. Bake for 25-30 minutes, until the top is lightly golden and a toothpick inserted in the center comes out clean.
  8. Allow it to cool slightly. For that extra treat, drizzle with icing or your favorite yogurt before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave or oven.
