A delightful twist on classic cinnamon rolls, this loaf combines comforting flavors with the nutritious goodness of cottage cheese, making it perfect for any occasion.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the cottage cheese, eggs, maple syrup or honey, and vanilla extract in a mixing bowl. Mix until the mixture is smooth.
  3. Whisk together the oats, baking powder, cinnamon, and salt in another bowl.
  4. Gradually mix the dry ingredients into the wet ones until everything is fully combined.
  5. Fold in the optional nuts and raisins or chocolate chips if you choose to use them.
  6. Pour the batter into the greased loaf pan, spreading it evenly.
  7. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before slicing. Enjoy!

Store leftovers wrapped tightly in plastic wrap or an airtight container at room temperature for up to three days, or freeze individual slices for up to three months.
