  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your skillet over medium heat.
  2. Whisk together the flour, baking powder, sugar, and salt until completely combined in a mixing bowl.
  3. Combine the milk, egg, and melted butter until smooth in another bowl.
  4. Fold the wet ingredients into the dry mixture until just combined. Don’t worry if the batter is a bit lumpy; this is normal!
  5. Mix together the cinnamon and brown sugar to create your sweet swirl topping in a small bowl.
  6. Pour the pancake batter into the preheated skillet and then swirl the cinnamon mixture on top.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  8. Mix the powdered sugar with 1 tablespoon of milk until smooth for the icing, then drizzle over the pancakes before serving.

Notes

For a dairy-free option, substitute almond milk. For a healthier twist, use whole wheat flour.
