Delicious muffins that combine the flavors of fluffy French toast and sweet cinnamon sugar, perfect for breakfast or brunch.

  • 6 slices of day-old bread
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 2 tablespoons melted butter
  • Additional ground cinnamon and sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Prepare the bread by tearing the slices into small pieces and placing them in a large bowl.
  3. Mix the wet ingredients in another bowl: whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until combined.
  4. Combine the egg mixture with the torn bread and gently stir to coat each piece.
  5. Soak the mixture for about 10 minutes to absorb the liquid.
  6. Make the topping by mixing brown sugar, melted butter, and a sprinkle of cinnamon in a separate bowl.
  7. Fill the muffin tin with the bread mixture, filling each cup about two-thirds full.
  8. Add the brown sugar topping generously over each muffin cup.
  9. Bake the muffins for 15-18 minutes, or until golden and set.
  10. Cool slightly before serving warm, optionally with maple syrup or berries.
